IT STARTED WITH A LONGING FOR SOMETHING THAT DIDN'T EXIST IN SWEDEN. SMOKED MEAT THAT HAD BEEN SITTING AND SAVORED IN A SMOKER FOR MANY HOURS.
So a simpler piece of equipment was rigged up in the garden at home in Höganäs in northwestern Scania, which resulted in the family having to eat barbecue for breakfast, lunch and dinner. Did not work. Sometime in that vein, we went to the USA to try "the real thing". Once there, it became crystal clear that treats like this, i.e. tender meat that almost falls apart when you touch it and that has a slightly smoky flavor as its most natural spice, must be offered to Scanians and Swedes in Sweden without any fuss!
